This weekend I made mini blueberry pies for some friends that were visiting from out of town. The weather has been unseasonably warm on the east coast (60+ degrees in January?!) so it didn't even feel like too summery of a treat! And with frozen blueberries, you can't go wrong!
They are simple to make, but a little time consuming (mostly because of the lattice tops.) Just make some pie crust, mold it into a buttered cupcake tray, mix up some berry filling (I used this recipe here,) cut out some dough strips for lattice (completely optional!) and bake! My oven tends to cook a little hotter and faster than most-- but I baked the pies for 5 minutes at 425 degrees and then lowered it to 350 for about 12-15 minutes.
Eat 'em hot and add vanilla ice cream! Yum!
